So here’s my recipe for macaroni salad– it fills my sense of nostalgia and I’ll have it on hand for a (hopefully soon-ish) family potluck. But this summer has been so different and it’s made me miss our family cookouts (and of course the foods usually at those cookouts). I didn’t make it at home because there are only 2 of us and if I really wanted macaroni salad, I could get it at the diner with a sandwich. Macaroni salad is one of those foods I never really had to make because it always appeared at cookouts and family get-togethers. Seriously, all the best foods come from those kitchens! Top with char siu, soft boiled egg, sliced spam, green onions, or nori.I really wanted to call this “Southern Gas Station Macaroni Salad” because that’s honestly what it is 🙂 The is the type of macaroni salad found at the little restaurant attached to the “country store” gas station. Just swap out the ramen for the chewier Saimin noodle that is popular in Hawaii.

  • Saimin– A delicious Hawaiian noodle soup similar to Shoyu Ramen.
  • Poke (Ahi Poke) – Diced raw fish, typically ahi tuna, sprinkled with sea salt and a sauce made from soy sauce and sesame oil and topped with chili peppers.
  • Loco Moco – Sticky long rice topped with hamburger patties, a fried egg, brown gravy, and topped with green onions.
  • Serve with poi or lau lau style in cooked ti leaves or taro leaves.
  • Kalua Pork – This is an easy Crock Pot recipe (in lieu of imu style) made with Kalua pig and cabbage (make with or without ti leaves).
  • If you don’t, you are in for a delicious Hawaiian food favorite! Delicious rice and spam wrapped in nori (dried seaweed) and enjoyed by all as a meal or snack any time of day! Dip in soy sauce for a little extra flavor.
  • Spam Musubi – If you know what this is, you know how good it is.
  • Shoyu Chicken– A popular Hawaiian dish featuring chicken thighs simmered to perfection in a sweet and savory ginger and garlic infused Shoyu sauce.
  • Made with coconut milk and a little sugar, it is a little bite-sized taste of Hawaii (pictured above).
  • Haupia – It only takes 4 ingredients to make this smooth, creamy, gelatin-like pudding dessert.

    Pineapple and ham have no business being in a Hawaiian mac salad.
